Fastest cheesecake recipe

I have this thing for cheesecake. I just looooove the flavors and ever since I baked my first New York cheesecake for a Daring Bakers challenge ages ago I was hooked. The only downside to baking a cheesecake is that it takes a while. About an hour in the oven and then – technically – another hour in the oven while it is cooling down. O and then another hour to wait for the cheesecake to cool enough to eat.

So that is a lot of waiting for that specific cheesecake taste… So I now give you the fastest ‘look-a-like’ cheesecake. Which takes literally five minutes of your time and can be enjoyed right away. Of course it is not exactly the same but it’s delicious and if you’re looking for a no-fuss dessert that will still impress your guests, this is the dessert for you.

Technically you probably cannot call this a cheesecake, but it has more or less the same ingredients. And I really did think it tasted like a really fast cheesecake, so that’s what I’m calling it.

Making it could not be easier. You take your favorite cookies and place them in the bottom of a nice glass. You can use cake instead of the cookies, if you prefer. Make it gluten free by simply using gluten free cookies.

You then mix the cream cheese, yogurt, vanilla and the sugar together and give it a good mix. If you want it a little fresher you can add some lime zest in there. Or sweeter by adding a bit more sugar. If you’re worried about sugar granules you can swap it for icing sugar instead. That will definitely be smooth enough. The fastest cheesecake then just needs the topping.

Strawberries or other fruit

I used strawberries here and mixed that with a bit of strawberry jam. That’s totally optional but it does give it a more jammy taste. Swap out the fruit for any other kind you like. There is no right or wrong.

Ingredients

  • 4 cookies of your choice for the bottom
  • 100 gr cream cheese
  • 100 gr Greek yogurt
  • 2 tbsp sugar
  • 1 vanilla bean split
  • 2 tbsp strawberry jam
  • 75 gr fresh strawberries

How to make the fastest cheesecake

  • Put the cookies into a bag and smash them with a rolling pin until you have crumbles. Take two glasses and divide the crumbles between the two glasses.
  • Take a bowl and add the creamcheese and yoghurt to it and mix it well. Add the sugar and the vanilla seeds and mix it through.
  • Divide between the two glasses.
  • Clean the strawberries and cut them in two or in four. Mix it with the strawberry jam and top the glasses with the strawberry mix. Keep it in the fridge until you use it or eat it straight away.
