Stir fried curly endive recipe with honey chicken
Most people know curly endive best because it goes so well in a curly endive salad. But there are so many more ways to enjoy this delicious vegetable. So my goal for this year is to come up with some new curly endive recipe. Not to be confused with Belgian endive by the way or also known as chicory.
Stir fried Curly endive recipe with honey chicken
For this curly endive recipe you start by marinating the chicken. Cut the chicken into pieces and place in a small bowl. Mix the honey and the soy sauce together and mix this well with the chicken. Leave to stand for just a few minutes. Soy is already quite salty so I generally do not add extra salt. But you can if you want to add some freshly ground black pepper.
For the vegetables you need about a head of curly endive. Keep in mind that it wilts a lot due to the high water content of this particular vegetable. So a huge amount will shrink to manageable portions soon enough. Just stick with it. You can also buy ready chopped endive. In that case you need about 400 to 500 grams of endive for 2 people.
While cleaning the endive you can remove the outer leaves and chop the inner leaves to small strips. Heat a large wok or skillet with a bit of oil, add the chicken and saute for about 3 minutes or until the chicken is golden brown. Add the curly endive to the chicken and stir it through. Let it wilt and let the moisture evaporate. If there is too much moisture you can drain some of it off.
Cooking the soba noodles
For this curly endive recipe I also added some soba noodles. Soba noodles are made of buckwheat flour and are gluten free. But check the labels on the package because sometimes they are mixed with wheat. While the curly endive and the chicken are cooking bring a large pan with water to the boil and add the noodles and the eggs. For a soft egg take them out with a slotted spoon after about 6 minutes. Cook the noodles according to the package instructions.
Mix the noodles with the chicken and curly endive and serve in a bowl with half an egg, chopped cilantro and crispy chili oil. (check here for a recipe on how to make crispy chili oil)
How to chop curly endive
Now if you’ve never worked with a whole head of curly endive you might be a bit unsure of how to cut. I generally chop of the end of the curly endive head which is the part which keeps it all together. I then proceed with cutting the leaves while holding them together with one hand and chopping with the other. Use strips of about 1/2 inch or less for best results. Wash the curly endive and using a salad spinner remove any excess fluids.
Obviously when you buy ready chopped, that is usually already washed and ready to go.

- 1 head curly endive
- 400 grams chicken thigh
- 2 tablespoon honey
- 2 tablespoon soya
- 1 clove garlic
- 1 tbsp olive oil
- 200 grams soba noodles
- 4 eggs
- 1 bunch coriander
- Delicious with crispy chili oil
- Cut the chicken thigh into pieces. Place in a bowl and mix with the honey and soy sauce.
- In a large frying pan with a dash of oil, fry the garlic, add the chicken and fry for 3 minutes. Cut the curly endive into pieces. Add the endive to the chicken and stir well. Put on a large pan of water and as soon as it boils, add the egg and noodles. For a soft egg, take it out after 6 minutes. Cook the noodles according to the package directions. Spoon the noodles through the chicken mixture and serve in a bowl with half an egg, chopped cilantro and crispy chili oil.
