Brioche with Smoked Eel

Today I’m sharing a super easy yet elegant dish: brioche with smoked eel. Now, eel might not be the most common ingredient in the U.S., but it has a rich, buttery flavor that works beautifully with the soft, slightly sweet brioche. Paired with creamy cheese, fresh herbs, and a bit of crunch from lettuce, this makes a perfect appetizer for Easter or a special brunch.
Not sure about eel? No worries, this recipe works just as well with smoked salmon, making it an easy and accessible option for everyone. And the best part? It’s ready in just 10 minutes!

Eel might be an ingredient you’re less familiair with but you can easily swap the eel for smoked salmon or smoked mackerel. The rest of the flavors will work equally well with the other fish!

Recipe Ingredients

You don’t need much for this easy Easter dish of brioche with smoked eel.

brioche – you can use a large brioche loaf and slice it, or use mini brioche buns like we did here. Brioche is sweet, but you can substitute it with another type of bread.
eel – how much eel you use per bun is up to you. We used about half a smoked eel fillet per bun, which came down to two strips per brioche.
cream cheese – use plain cream cheese or a flavored version like chive cream cheese
crispy chili oil – you can make this yourself using a crispy chili oil recipe, or buy it at the store. I’m a fan of the Lao Gan Ma brand.
lettuce – since most elements are soft, it’s nice to add something crunchy like lettuce
dill – to finish it off

You can also make these buns with smoked salmon if you prefer.

How To Make Brioche with Smoked Eel

Making these brioche buns with eel is super simple and quick. Slice the buns open and lightly toast them if you like. This makes them a bit sturdier. Spread the buns with cream cheese, top with a leaf of lettuce, and add the eel fillets. Finish with fresh dill.

FAQ Smoked Eel Brioche

Absolutely! Brioche is quite sweet and soft, but you can easily use toasted sourdough, a crusty baguette, or a sturdy sandwich roll. Choose a bread with a bit of structure.

Use smoked eel fillet. It’s ready to eat and has a rich, delicate flavor that pairs perfectly with the creamy cheese and slightly sweet brioche.

Yes! If you’re not a fan of eel, smoked salmon works really well. Mackerel or even a vegetarian alternative could also be great options.

You can prep the components (like mixing the cream cheese), but it’s best to assemble the buns just before serving. That way the bread stays fresh and doesn’t get soggy.

Not necessarily, but it’s recommended. Lightly toasting the bread makes it sturdier and adds a nice contrast to the soft toppings.

Plain cream cheese works perfectly, but you can also use a flavored version like chive cream cheese. Adding crispy chili oil gives it extra flavor.

These buns are perfect as an appetizer, brunch dish, or part of an Easter spread. Serve them right after assembling for the best flavor and texture.

They’re best eaten right away. You can store them in the fridge for a few hours, but the bread will soften.
