Making peanut sauce

I definitely have a soft spot for peanut sauce. I find it tasty, simple and, apart from things like a barbecue, it goes with endless other dishes. It can serve as a salad dressing or you can use it in stir fries as well. Or use it as a simple dipping sauce. This peanut sauce recipe literally takes less than 10 minutes to make. And you can easily adapt it to your own taste. It’s a vegan peanut sauce provided you do not use fish sauce as an extra flavor.

Peanut butter with nuts

For this satay sauce, I used peanut butter with nuts. Of course, if you want a softer result, you can use creamy peanut butter without nuts. I liked it and it adds a bit of bite to the end result, but it works both ways. If you want a sauce that is a bit thinner, you can add a splash of coconut milk. I like my peanut sauce to be quite thick but it’s easy to add more water and make it thinner until it has the desired consistency. Due to the use of the ginger syrup there is already some sweetness so I don’t add any extra sweeteners but you can add some maple syrup or brown sugar if you want.

What else do you need?

To make this easy peanut sauce recipe, you will need the following ingredients

  • peanut butter
  • Tomato puree
  • Ginger syrup
  •  soy sauce or coconut aminos
  • Sriracha
  • Lemon Juice
  • water

As you can see, these are not complicated ingredients and some can be easily substituted if you don’t have any in the house.

What can you substitute?

If you don’t have Sriracha sauce, you can substitute with sambal. The ginger syrup can be replaced with a combination of fresh ginger and a spoonful of honey. If you don’t have sambal either, you could use some ketchup and add some chilli powder to make it a spicy peanut sauce. Adding some red pepper flakes will also work.

The lemon can be replaced with lime. You can also add a spoonful of miso, but as not everyone has it, the recipe for the satay sauce is without it. A little splash of fish sauce is also a great addition.

You can also make the satay sauce more or less spicy, depending on your taste. I used two tablespoons of Sriracha, but most people will find one spoonful is enough. It’s easy to adjust, so start with a little and add as you like.

What can you use the sate sauce with?

Like I said, I like it with everything. It’s delicious in these noodles for example, but gado gado is one of my favorite dishes to use satay sauce on. I also love it as a dip. In that case, you make pieces or slices of cucumber, carrot, celery, cauliflower florets and so on to dip in the peanut sauce.

A little more unusual, but I also like to eat fried banana with peanut sauce. Soooo delicious. Of course, it’s a classic with things like barbecue or chicken satay. But you can do so much more. Add it to your next buddha bowls or chicken satay salad or your next noodle salad. Boil an egg and eat it with peanut sauce. You can’t really go wrong here!

Satay sauce without peanut butter

If you don’t want to eat peanuts, you can use another nut paste. For example, you could use almond butter or cashew butter. I use that a lot as well. It’s a great recipe to use with almost any kind of nuts. I used nut butter in this paleo gado gado version. Sunflower seed butter will also work although the flavor will be very different.

Nut pastes are generally a little trickier to mix, but with a little patience you can get it right. If you can’t get it smooth enough a food processor or immersion blender can help with that.

Additions and variations

Apart from all the variations I’ve already given consider adding one of the following ingredients to change things around; fresh garlic, chili sauce, red curry paste, fresh lime juice, cayenne pepper, curry powder or hoisin sauce.

How long can I keep the peanut sauce?

You can keep the peanut sauce for a few days in an airtight container in the fridge. When reheating you might need to add some additional fluids to loosen it up again. Some hot water usually does the trick.
