Peanut Butter and Banana Toast

Some flavor combinations just work - and peanut butter with banana is definitely one of them. Add crispy toasted bread into the mix and you’ve got a grilled sandwich that’s sweet, savory, crunchy, and ridiculously good. Perfect for a quick lunch, an easy snack, or even breakfast if you ask me!

This peanut butter and banana toast is honestly one of my favorites. And the best part? You can easily customize it however you like.

  • deliciously crispy – nothing beats making a grilled sandwich in a skillet
  • super quick to make – you only need a few minutes to put it together, toast it up, and dig in
  • the perfect sweet and salty combo (even more so if you add bacon!)

Ingredients for peanut butter and banana toast

For a peanut butter and banana toast, you really only need three basic ingredients: bread, banana, and peanut butter.

  • banana – I use quite a bit of banana here (even if you can’t really tell from the photos), but you can easily adjust the amount
  • peanut butter – I used crunchy peanut butter, but any kind works well. You can also make your own peanut butter.
  • sourdough bread – or another sturdy bread. You can use whatever bread you like, but it tastes best when the bread is nice and firm
  • bacon – completely optional. The sandwich is delicious without it, but if you love extra flavor, the salty bacon is a great contrast to the sweetness of the banana

How To Make Peanut Butter and Banana Toast

I personally like making this grilled sandwich in a skillet because it gives you the crispiest crust. But if you have a sandwich press or panini maker, that works too.

Step 1 – Butter the outside

Spread butter on the outside of the bread slices, not the inside (although you can if you want to). The butter helps create that delicious crispy crust in the pan.

Add peanut butter and banana

Step 2 – Add the peanut butter and banana

Spread a generous layer of peanut butter on the inside of the bread. You can spread one side or both sides – totally up to you. Top with banana slices. A little pinch of cinnamon is also really tasty here.

Add another slice of bread

Step 3 – Add the second slice of bread

Place the second slice of bread on top and butter the outside as well. Now you’re ready to toast the sandwich in the pan. You can add a little extra butter to the skillet if you like, but it’s not really necessary.

Toast until golden brown

Step 4 – Toast until crispy and serve immediately

This sandwich is definitely best eaten right away. The peanut butter will still be slightly melted and the sandwich itself perfectly crispy.

Peanut Butter and Banana Toast

Ingredients

  • 4 slices sourdough bread or another sturdy bread
  • butter to taste
  • 4 tbsp peanut butter
  • 2 bananas sliced

Optional extras

  • 4 slices bacon

Equipment

  • Skillet

Instructions

  1. Heat a skillet over medium heat and spread a thin layer of butter on the outside of the bread slices. Spread peanut butter on each slice and top with banana slices. Place the second slice of bread on top.

  2. Make sure the outside of the sandwich is nicely coated with butter.
  3. Melt a little butter in the skillet and cook the sandwiches on both sides until golden brown and crispy. Flip after about 2 minutes and cook the other side for another 2 minutes.

Optional

  1. The sandwich is already delicious as is, but for an extra savory touch, add crispy bacon. Cook the bacon until crispy and let it drain on paper towels.

  2. If using bacon, place it on top of the banana slices before toasting the sandwich in the skillet.

Notes

Storing: This sandwich is really best when served right away. If you keep it for too long it will lose the crispiness and become stale and unpleasant.
Replacements: Instead of peanut butter you can use any kind of nut butter or a nut free alternative.
Bread: I love using sturdy bread for this like sourdough. But you can really use whatever bread you have on hand. Even gluten free bread will work.
