3 ingredient healthy peanut butter cookies

I have to say that I actually don’t bake cookies all that often. Something I just can’t be bothered but other times I craving easy cookies and these easy peanut butter cookies just fit the bill perfectly. 

First of all you need a couple of ingredients to get started:

  • banana
  • peanut butter (either use creamy peanut butter or chunky peanut butter)
  • self-raising flour

The good thing about these cookies is that there is much less sugar in it. Obviously you use the sugar content from the bananas, but there is no need to add any additional sugar whatsoever. Making these rather healthy if you’re watching your sugar intake. They do still contain flour so I’ll be trying to make these gluten free soon too. For now I’m sharing this delicious and easy recipe with you.

Ingredients for making the peanut butter cookies

​Step by step

To start the process you take a fairly large bowl and you add the ripe bananas to it. Using a fork puree them until they are semi- smooth. You do not want it to be completely smooth. It is fine to have some chunks in there. That will make the cookies even more delicious. So for best results do not use a stick blender.

Once the banana is done you add the self raising flour to the banana and using a fork mix it around. Add the peanut butter at this stage too and make it into a peanut butter cookie dough. The good thing about this dough is that you can use any kind of nut butter to make it. Think about using almond butter, sunflower seed butter or cashew butter instead of peanut butter or use a mix of the two. But if someone has a peanut allergy you can still make them with any kind of nut butter.

These 3-ingredient peanut butter cookies are quite forgiving in that respect. It’s simple ingredients but so tasty.

Once you have the dough complete you make them into cookie dough balls by using your hands to form them into small balls. Place them on a baking sheet lined with parchment paper and – using the back of a fork – make a criss-cross pattern on the cookies. Obviously that is not a must but it makes them look super cute.

Once you’ve finished all the dough place the cookies into the oven for 10-12 minutes or bake them until they are golden brown. Take out of the oven and transfer the cookies after a few minutes to a wire rack to cool completely.

Variations

The good thing about these delicious peanut butter cookies is that you can also easily make different variations. The first one I already mentioned by changing to a different nut butter. Some other variations can be adding chocolate chips to the dough. Or if you have a sweet tooth you can add some brown sugar or coconut sugar to taste. Don’t add too much as that will change the structure of the dough but adding one or two tablespoons should be just fine. 

Apart from changing to a different nut butter you can also change which kind of peanut butter you use. You can use salted peanut butter for instance, smooth or use any of the other peanut flavor they have these days. Here in the Netherlands we even have a store called the peanut butter store which sells an amazing amount of different kinds of peanut butter.

Pretty sure there will be similar things around the world, so have a look out for different flavors to change your cookies around. 

If it is the first time making the cookies I’d stick to the original recipe and make changes after you know how they turn out. 

There are also lots of optional ingredients you can add like sesame seeds or added flavors. 

Different flours

Since these are so easy to make I’m pretty sure using different kinds of flours will be possible too. Think about using coconut flour or almond flour or a mix of both to create an entirely different cookie. Oat flour is also definitely a possibility I’ll be looking at next. The actual number of servings for this recipe depends on how big or how small you will make your cookie dough balls. I’ll stick to around 10-15 pieces.

Ingredients

  • 2 bananas overripe
  • 125 gr self raising flour
  • 2 tbsp peanut butter
  • 1 tsp ginger spices

  • Preheat the oven to 180ËšC
  • Using a bowl and a fork puree the bananas until you have a coarse result. Doesn't need to be super smooth.
  • Add the self raising flour and mix it with a fork. Add the peanut butter and the gingerbread spices and mix to a dough.
  • Using two spoons scoop out balls and place those on a baking sheet lined with baking paper.
  • Place in the oven and bake for about 10-15 minutes or until golden brown.
