Some flavor combinations just work - and peanut butter with banana is definitely one of them. Add crispy toasted bread into the mix and you’ve got a grilled sandwich that’s sweet, savory, crunchy, and ridiculously good. Perfect for a quick lunch, an easy snack, or even breakfast if you ask me!
Heat a skillet over medium heat and spread a thin layer of butter on the outside of the bread slices. Spread peanut butter on each slice and top with banana slices. Place the second slice of bread on top.
Make sure the outside of the sandwich is nicely coated with butter.
Melt a little butter in the skillet and cook the sandwiches on both sides until golden brown and crispy. Flip after about 2 minutes and cook the other side for another 2 minutes.
Optional
The sandwich is already delicious as is, but for an extra savory touch, add crispy bacon. Cook the bacon until crispy and let it drain on paper towels.

If using bacon, place it on top of the banana slices before toasting the sandwich in the skillet.
Notes
Storing: This sandwich is really best when served right away. If you keep it for too long it will lose the crispiness and become stale and unpleasant.Replacements: Instead of peanut butter you can use any kind of nut butter or a nut free alternative.Bread: I love using sturdy bread for this like sourdough. But you can really use whatever bread you have on hand. Even gluten free bread will work.
