How to make your own mayonnaise from scratch
It’s simple. even you can do it!
If you’re anything like me you have maybe never made your own mayonnaise. Out of a fear of it being too complicated, too time intensive or simply not your ‘thing’.
And the first time I made it, I have to confess it was not immediately a success. The reason? Too much in a hurry, dumped the oil in way too quick and just hoped it would still work. It did not. But when you take a bit of time, make sure your ingredients are all at room temperature and just take it slow… it’s quite easy to do and so satisfying!
You can season it any way you want and in this case I used lime and parsley but what about adding garlic (and make it a killer aioli) or your favorite herb. I love adding chipotle in there too for a bit of a kick. Once you have the basics, it is really easy to do.

Homemade mayonnaise
Ingredients
- splash of white vinegar
- 1 eggyolk
- 1 tsp of mustard
- sunflower oil
- salt
- pepper
- parsley
- lime
Instructions
- Put a small splash of white vinegar in a bowl, add one egg yolk and some mustard. Stir those together until it starts to form bubbles on the surface. Then slowly start to add sunflower oil to it and keep stirring to make it all binds together. Once the mixture start to really bind you can start pouring the oil in a little faster and keep going until you think your mayonnaise has the right consistency. It's as easy as that!
- Add finely chopped parsley, pepper, salt and lime to taste

Apart from the fattening aspect of mayonnaise I love it. Don’t you think mayonnaise is fabulous? And it goes with soooo many things… I just wish it was healthy too…:(
