This avocado toast with egg is one of those dishes that proves simple food is often the very best. Creamy ricotta, ripe avocado, and a soft egg – it really doesn’t need much more than that. Perfect as a little breakfast treat for yourself, but also great to serve as part of a more elaborate Easter breakfast or brunch.

I personally love this toast with a poached egg, but let’s be honest: not everyone gets excited about poaching eggs. Luckily, a soft-boiled egg is just as delicious and a lot less intimidating.

  • Egg – If you’re poaching the egg, it’s best to use very fresh eggs so they hold together nicely in the water.
  • Ricotta – Optional, but it adds extra flavor and creaminess. Season the ricotta with salt, pepper, lemon zest, and basil.

How To Make Avocado Toast with Egg

To make avocado toast with egg, start by cooking the eggs. You can go for a soft-boiled egg, poach it, or even fry it – all options work well. Season the ricotta and toast the bread. This is a slightly different version from the avocado toast with hemp seeds I made a while ago.

Perfect Poached Egg

Poaching may look a bit fancy, but flavor-wise it doesn’t really make a difference. If you want to poach an egg, use the freshest egg possible and keep the water just below boiling (so no bubbling). Crack the egg into a small bowl first, then gently slide it into the water. After about 3 minutes, you’ll have a perfectly soft poached egg. It can help to create a small whirlpool in the water so the egg white naturally wraps around the yolk.

Absolutely! A soft-boiled egg is a great alternative and just as tasty. A fried egg with a runny yolk also works really well.

I love using sourdough bread but any bread will work. Even toasting it is optional but I do love the added crunch.

You can although the flavor will be different. Huttenkase would be a good alternative but leaving it out all together is also a good option.

Eventually any avocado will turn brown if you let it sit for too long. You can sprinkle some lemon juice over the sliced avocado to keep it from turning brown but it’s best to serve it right away.

Absolutely! This is the perfect easy Easter breakfast! But can also work for a more elaborate easter brunch.

You can use hard boiled eggs as well. You will lose part of the creaminess but if you hate runny egg yolk that is absolutely a good option!

Avocado Toast with Egg

Ingredients

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 100 g ricotta
  • 1 sprig fresh basil
  • Zest of 1 organic lemon
  • 2 eggs poached or softly boiled

Instructions

  1. Season the ricotta with salt, pepper, chopped basil, and lemon zest.
  2. Briefly grill the bread slices in a grill pan (or use a toaster) and spread them generously with the ricotta.
  3. Peel and slice the avocado and top each slice of bread with half an avocado.
  4. Serve with a poached egg on top.

    One of my favorite easy breakfast or lunch recipes is a simple avocado toast. Sometimes I make it with ricotta and other times just the avocado and the egg.
