Delicious Asian chicken burger rolled through sesame seeds with spicy chili mayonnaise. Serve on a crispy bun.
Asian chicken burger
I love Asian flavors and this Asian chicken burger has some of my all time favorite flavors in there. Think a splash of fish sauce, lemon grass, garlic and chili. Combine that with a crispy coating of sesame seeds and you have the perfect Asian chicken burger!
Now for making the chicken burger itself I always use chicken thigh fillet. The reason being that you do need some fat in the burger to make it juicy. Chicken breast gets dry too quickly and while you can make it with chicken breast, I would advise not to. Chicken thigh is the better option here. I also don’t buy ready made ground chicken. I am not too big of a fan of that as it is somehow always a bit wet. Plus there is usually ingredients in there that I really don’t need.
Making the ground meat
So instead I use (organic) chicken thighs and I ground them myself. Making ground meat can of course be done with a special machine but I simply put it in the food processor, add all the tastemakers in there and you mix it to a rough paste. You want some structure in there so not too fine.
if you want to make sure that your Asian chicken burgers are having the right flavor you can use a tiny bit of the meat mixture and test it by baking a small amount. That way you can still adjust the seasoning if needed.
Shaping the Asian chicken burgers
Now if you feel that the meat is not firm enough to make burgers you can add some breadcrumbs to the meat. I didn’t think it was necessary but it also depends on which chicken you’ve used. I roll the burger patties through the sesame seeds and bake them in a skillet with oil or butter. Or even better a mix of oil and butter.
You want to serve the Asian chicken burgers with something sweet and spicy. I made a quick and simple spicy mayonnaise by mixing mayonnaise with sweet chili sauce and a tiny bit of fish sauce. The sweet chili sauce (depending on brand) is usually not overly spicy. If you want to have a spicier dressing you can add a bit ground chili as an extra.

Asian chicken burger with spicy chili mayo
Ingredients
- 300 gram chicken thigh fillet chopped into rough pieces
- 1 tbsp fish sauce
- 2 cloves garlic choppd
- 1 piece lemongrass grated (around 1 tsp)
- 1 red chili seeds removed and roughly chopped
- 1 tbsp sesame seeds
Topping
- Lettuce
- fresh coriander cilantro
- 75 g cucumber sliced
- If you like it extra spicy jalapenos, sliced
- 1 tbsp sweet chili sauce
- 3 tbsp mayonnaise
- 1 tsp fish sauce
- 2 hamburger buns of your choice
How to make the Asian chicken burger
- Place the chicken in the bowl of the foodprocessor and add fish sauce, garlic, lemongrass, red chili, sesame seeds and cilantro and mix it all together. Not too fine but also not too chunky.
- Form into two big hamburger patties and place them in the fridge to get a little firmer
- Roll the burgers through some extra sesame seeds just before baking them in a pan or on the BBQ.
- Make the sauce by mixing the mayo with the chili sauce and the fish sauce and open your buns
- First put a spoonful of sauce on each bun and add lettuce. On the lettuce you place the burger and top this with cucumber, jalapeno and the fresh cilantro. Add another spoonful of sauce to finish it off.
- Cover with the top of the bun and eat straight away!

Great burger! That mayo looks wonderful. We’re having lunch with friends today, and I’m contemplating a burger. 🙂 Or maybe split one with Mrs KR — I can eat a whole one all too easily, but probably shouldn’t. 🙁 On hair? Oh the subject of your hair….stick with it. I have been through the same thing and now I love my hair. I went with a slightly darker shade of blond while it was growing out and I ended up loving the color. However the growing process was truly a chore….use clips, bobby pins, head-bands and avoid mirrors!
