Air Fryer Okra with Garlic Butter

Okra can be a bit of a mystery vegetable with the reputation that it is slimy and not so good. But try these air fryer okra and you'll be amazed how delicious this vegetable can be!

Air fryer okra with Parmesan is one of my favorite ways to enjoy this underrated vegetable. Okra is a green seed pod that’s popular in Caribbean, Surinamese, Southern U.S., and Asian cooking. It’s easy to find at international grocery stores, Caribbean markets, Middle Eastern markets, and many larger supermarkets.

The first time I tried an okra recipe was on Curaçao. It was an okra soup, and just like anyone who’s ever cooked okra will tell you, it can get pretty slimy. Why You Should Try Okra

Okra is incredibly versatile and also happens to be packed with nutrients. That natural “slime” everyone talks about? It’s actually rich in soluble fiber, which is great for gut health. Okra is also loaded with fiber, vitamins, and minerals.

That said, I’m not the biggest fan of the slimy texture either, so I started experimenting with ways to cook okra that minimize it. The air fryer does exactly that, giving the pods crispy edges while keeping the inside tender.

Recipe Ingredients

To make this easy air fryer okra, you’ll need:

  • Okra – Mine came from a local Surinamese grocery store. Look for smaller, smooth pods whenever possible. They’re more tender and have the best flavor.
  • Parmesan cheese – Freshly grated Parmesan works best, but you can substitute another hard cheese if you like.
  • Butter – Olive oil or avocado oil also work well.
  • Garlic – Fresh grated garlic adds the most flavor, but garlic powder is a perfectly good substitute. I made a similar garlic butter like in my kohlrabi recipe with garlic butter.

How To Make Air Fryer Okra

Wash the okra pods

Step 1 – Clean the okra

Sort through the okra and discard any damaged or heavily discolored pods. Rinse the remaining pods under cold running water and pat them completely dry.

Slice the okra

Step 2 – Slice the okra

Trim off the stem ends and the pointed tips. Slice the pods into ½-inch (1 to 1½ cm) pieces. If you prefer larger pieces, simply slice the pods in half lengthwise instead.

Melt the butter and mix it with the garlic, grated Parmesan, and seasonings.

Step 3 – Coat the okra

Toss the sliced okra with the seasoned butter until evenly coated.

Spread the okra in a single layer in the air fryer basket and cook for 10 to 15 minutes, or until tender with crispy, golden edges.

Step 4 – Serve the okra

Serve the grilled okra with a spicy dipping sauce, or add it to a salad for extra flavor and texture.

What is okra?

Okra, also known as lady’s fingers, is an edible seed pod that belongs to the mallow family. The plant is an annual that can grow surprisingly tall—up to 13 feet (4 meters).

When you slice into fresh okra, you’ll immediately notice a sticky sap inside the pods. While that texture isn’t for everyone, it’s what makes okra such an excellent thickener for soups and stews. Fortunately, high-heat cooking methods like roasting and air frying greatly reduce the sliminess, making okra much more appealing for anyone who’s hesitant to try it.

FAQ Air Fryer Okra

No! The hot circulating air helps the okra become lightly crisp instead. Be sure to pat the pods dry before cooking and coat them lightly with butter or oil for the best results.

No. Fresh okra can go straight into the air fryer after it’s been seasoned.

Air fryer okra cooks best at 400°F (200°C). Depending on the size of the pods, they’ll be ready in about 10 to 15 minutes.

Absolutely. Pecorino Romano is a great alternative, or use your favorite dairy-free Parmesan substitute for a vegan version. I wouldn’t use cheese that is too melty as it will become a mess in the air fryer and will not have the same crispy finish.

It’s delicious as an appetizer, snack, or side dish. It also pairs wonderfully with Mediterranean-inspired meals, grilled meats, or Asian-inspired dishes.

Air Fryer Okra with Garlic Butter and Parmesan

Ingredients

  • 250 grams fresh okra
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ¼ teaspoon sea salt
  • 2 cloves garlic grated
  • 30 grams butter melted
  • 30 grams grated Parmesan cheese

Equipment

  • Air fryer

Instructions

  1. Wash the okra, trim off the stems and tips, and cut into ½-inch (1 to 1½ cm) pieces.
    250 grams fresh okra
  2. In a small bowl, combine the smoked paprika, onion powder, sea salt, and grated garlic.
    1 teaspoon smoked paprika, 1 teaspoon onion powder, ¼ teaspoon sea salt, 2 cloves garlic
  3. Melt the butter and stir in the seasoning mixture. Pour over the okra and toss until evenly coated.
    30 grams butter
  4. Add the grated Parmesan and toss again.

  5. Arrange the okra in a single layer in the air fryer basket.
  6. Air fry at 400°F (200°C) for 10 to 15 minutes, shaking the basket halfway through cooking, until the okra is tender and golden brown.

Notes

Storage; You can keep the cleaned okra for a day in the fridge but okra doesn’t last very long. Once prepared in the air fryer eat it straight away. It will become a bit chewy if you don’t.
