Of course weather can vary wildly across the globe, but at least here in Europe it seems to be ridiculously hot the last couple of weeks with temperatures even reaching up to 40ËšC / 104 ËšF, which I think is insane. With that kind of weather cooking is not my favorite pass time. So I eat a lot of salads. That’s why today I am sharing 15 easy salads for hot weather.

They will also be perfect as a side dish for your next barbecue and – the good news – they can also be eaten when it is not hot.

If you want to store your salads or take them with you to lunch at work for instance, it always helps to pick vegetables that are a bit sturdier than your average lettuce. Even choosing arugula over lamb’s lettuce for instance will make a difference.

You probably can’t find dakos bread in the Netherlands, so if you can’t make it yourself, you can substitute sourdough bread. I like to toast it and serve it with the salad. Alternatively, you can serve it more like a panzanella by tossing the bread through the dakos salad. This way the bread absorbs the liquid. Either way is fine, of course. Choose what you like best.
