Vegan pate (from Green Kitchen stories)
What to put on that slice?
When I just started thinking about going vegetarian I had this panick moment where I wondered what on earth I was going to put on my sandwich. You have to know that I am a big big fan of bread so imagine the horror of not being able to slab on a piece of bacon and make everything taste good. I mean if I had to think about what I would miss most? It would possibly be bacon.
Cookbooks galore
Thankfully I have about a gazillion cookbooks and as it happened I also have quite the collection of vegan and vegetarian cookbooks, so no short supply of inspiration. I started with one of my favorite books and that was the Green kitchen stories where I found this delicious recipe for a vegan pate spread on your sandwich. And let me tell you: it’s addictively delicious. Try for yourself but don’t say I didn’t warn you!
Vegan walnut pate
Ingredients
- 200 gram walnuts soaked overnight
- 200 gr sundried tomatoes on oil β drained
- few leaves of sage
- seasalt
- black pepper
Instructions
- Place all ingredients with 2 tbsp of clean water in a foodprocessor or use a stick blender. Mix until it is relatively smooth. Add some water if you find it is too thick.
- Put into a airtight jar.
- You can keep it in the fridge for about a week

I love sandwiches, too. This pate is neat — perfect sandwich spread. Unless I’d eat it by the spoonful first, of course. π
Haha… Yes that is a real danger with this delicious pate. But than it’s easy to make so quick to make a new batch.. π
