The magic of this salad is the combination of strawberries and tomatoes. It might sound a little unusual if you’ve never tried it before, but trust me – they’re made for each other. The sweetness of the strawberries balances the salty halloumi perfectly, while the tomatoes add extra freshness. It’s also a great way to enjoy plenty of fresh fruit and vegetables during strawberry season.

Recipe ingredients
For making this quick strawberry halloumi salad you don’t need a lot of fancy ingredients.
- Strawberries – ripe, sweet strawberries are the star of this salad. Outside strawberry season you could also use peaches or nectarines.
- Cherry tomatoes – any variety works well. Mixed-colored tomatoes make the salad even prettier.
- Halloumi – this salty cheese becomes wonderfully crispy when fried. You could also use grilled feta or mozzarella, although halloumi gives the best texture.
- Fresh mint – adds a lovely fresh finish. Basil is another great option.
- Sweet balsamic vinegar – I love using a fig balsamic, but any slightly sweet balsamic glaze or aged balsamic vinegar works beautifully.
How to make this strawberry halloumi salad
Wash the strawberries and cut them into bite-sized pieces. Halve the cherry tomatoes and roughly chop the mint.
Pat the halloumi dry with kitchen paper before cutting it into cubes. This helps reduce splattering when frying and gives the cheese a nicer golden crust.
Heat a little sunflower oil in a frying pan over medium-high heat and fry the halloumi until golden brown on all sides. Transfer it to a plate lined with kitchen paper.
Combine the strawberries, tomatoes and mint in a large serving bowl. Add the warm halloumi and drizzle everything generously with the sweet balsamic vinegar. Serve immediately while the halloumi is still warm.
For a more filling meal, serve the salad with some crusty bread or add a handful of toasted pistachios or walnuts for extra crunch.

Ingredients
- 150 gr strawberries
- 100 gr cherry tomatoes
- 75 gr halloumi

Instructions
- Wash the strawberries and cut them into pieces. Cut the halloumi into little squares and heat some sunflower oil into a frying pan. Put the pieces halloumi into the one once it is hot and quickly bake them golden brown. Be careful as it tends to spatter a bit.It usually helps if you pat the halloumi dry with a paper towel before frying.
- Leave the halloumi to drain on kitchen towel. Put the strawberries and the tomatoes pieces into a large bowl and add the halloumi in.
