It is no secret I love simple and quick desserts, such as one of your favorites, the 5 minute Christmas dessert (which will work equally well for Easter of course) This version is lactose-free but has endless possibilities which I will tell you about below. Recipe Ingredients
Maybe you have no specific plans during Easter (I usually don’t) and you’re just hoping that the weather will be nice. Or maybe you have an elaborate Easter dinner party planned with friends and family and you’re looking for an easy dessert that will be most of all a simple recipe but still very delicious. Well, I’ve got you covered!
You need the following basic ingredients to make this Easter dessert:
- coconut yogurt – can be replace with regular thick Greek yogurt
- cookies – I used gluten-free cookies but you can use whatever you like
- mango – depending on the season you can use both frozen or fresh mango
- lime – I added a bit fresh lime zest on top but you can also add a squeeze of lime juice
How To Make Quick Easter Dessert with Mango
I love quick and easy desserts. Last year I posted the Easter bunny trifle and that went wild. For good reason as it is a delicious Easter dessert but also super easy to make. So whatever your plans are for this Easter you can’t go wrong with this quick easter dessert. It features fresh fruit and cookie crumbles but can easily be adapted. I’m giving you some options so you can choose your own version.
Basic version of Easter dessert with mango (gluten-free and lactose-free)
Mango is one of my all time favorite fruits. And it’s yellow, which seems to be the color of choice for Easter in general. The first version I am giving you here features lemon zest, mango, pistachio cookies (gluten free) and coconut yogurt. You can sweeten the yogurt with a bit of honey if you want. Or you can use Greek yogurt instead. I like sweetening the yoghurt just a little bit but you can add as much or as little honey as you like.
You basically add a small layer of the yogurt in a nice glass and you add a good amount of mango cubes and combine those with the cookie crumbles on top. You can add some chocolate bunnies for looks if you want or chocolate eggs. Both work really well. In terms of which cookies you’re going to be using; you can use simple sugar cookies or graham crackers. Since the recipe is quite simple I would go for more special cookies like festive Easter cookies, carrot cake cookies or Italian Easter cookies. I do use pre-made cookies. This is – after all – a quick easter dessert.
Cream cheese version
If you think the above quick easter dessert is too simple you can make this into a cream cheese version. For that you use a bit of cream cheese and you mix that with whipped cream and sugar. Add a bit of lemon juice in to loosen it up a little bit. The rest is the same. Instead of adding the yogurt to the glass you add the cream cheese mixture. Use a piping bag if that is easier to add to the glass. And again add some easter candy or dark chocolate on top of the mango/cookie crumbles.
Ice cream version
If non of the above appeals to you why not turn this into an ice cream version? You will need vanilla ice cream, mango or maybe fresh strawberries or other fresh berries and some heavy cream. Add the ice cream to nice glasses or bowls, top with the fresh fruit and sprinkle some crumbled cookies or easter treats over the top. Finish with some whipped cream and again; done in minutes!
Alternative toppings
If you’re not into mango or crumbled cookies you can literally sprinkle just about anything over the top. A drizzle of lemon curd, a bit of peanut butter (because why not, right?), dark chocolate, white chocolate, lemon cake, crumbled meringue, leftover easter bundt cake… chopped nuts. The list goes on and on. The good thing is that the base of the recipe is so simple that you can’t go wrong. It’s a fun easter dessert and perfect for Easter sunday I would say!

You can make it in advance but the cookies will loose their crunch after a while. And since it is so incredibly quick I would suggest it is better to make it fresh. But if need be you can make it a few hours in advance.

Quick Easter Dessert with Mango
Ingredients
- 400 grams (coconut) yogurt
- 250 grams mango finely chopped
- 2 to 3 pcs cookies use your favorite cookies!
- 1 lime zested
Instructions
- Take four festive glasses and prepare them.
- Mix the coconut yoghurt with the zest of 1 lime. You can optionally add some maple syrup, but it is not really necessary in terms of sweetness.
- Divide the coconut yogurt between the glasses and top with the mango cubes.
- Finally, crumble the cookies on top and finish with some extra lime zest.
