Roasted Brussels sprouts with chestnuts

It’s definitely a Christmas and thanksgiving dinner classic; roasted Brussels sprouts with chestnuts. I combined it here with lots of bacon, because it can use a bit of salt. Another good idea would be to add a bit of parmesan cheese to the dish. Roasting Brussels Sprouts is also the best way to prepare them if you ask me.

It is kind of funny that people seem to go crazy for Brussel sprouts at Christmas, even though there are still a lot of people who hate them. I love Brussels sprouts, so of course I am not complaining. And this really is a nice, simple dish. Just clean the sprouts (or buy clean ones, which is even quicker), mix them with the chestnuts and bacon and pop them in the oven. If you buy them in the grocery store the cut side of the sprouts can get a little dry so I always cut the flat side a bit extra. Bigger ones are cut. Smaller sprouts can be kept whole if you want.  Roast them in the oven until golden brown. They also do really well in an air fryer.

If using the air fryer for preparing the Brussels sprouts place them in the machine with a sprinkle of olive oil. For use in the air fryer I add the halved Brussels sprouts to a bowl and sprinkle some olive oil over them. Shake it around so all vegetables are having a bit of the oil. Add some black pepper and sea salt and roast for about 15 minutes at 180˚C/ 250˚F. Check if they are done. I find that the leaves on the outside get even crispier in the air fryer.

These Brussels sprouts with chestnuts and bacon also go very well with a main dish of a nice turkey, a glazed ham or any other piece of meat. Also excellent with game. Want to add some crunch? Add some hazelnuts. You can also roast them in the oven.

For the chestnuts, I always use peeled and pre-cooked chestnuts. I once made the mistake of buying a huge quantity of chestnuts. Raw and unpeeled. That was a bit of a nightmare to clean so ever since I just buy them cleaned and cooked. Saved my fingers and makes life so much easier.

And at this time of year you can really buy ready-to-eat chestnuts without any crazy additives. So I say do it. By the way, they are available all year round in Turkish or Moroccan supermarkets. The chestnut sprouts won’t bother you if you don’t clean them yourself.

A classic, but no less delicious. These Brussels sprouts with chestnuts and bacon are delicious as a side dish at Christmas.
