Pungy, sweet and sour; this delicious Thai green mango salad is the perfect salad if you love Asian flavors. It will instantly transport you to South East Asia. It’s refreshing on hot days and a perfect side dish.
While technically this should be made with green mango, it is still equally delicious with somewhat ripe mango. I couldn’t find green mango so I went with mango that was not exactly ripe, but not exactly green either.

Recipe Ingredients
If you can find green mango that is obviously a must, but if you have trouble finding it, rest assured that it is also delicious with regular mango. Make sure to check the exact ingredients in the recipe card below.
- green mango’s – they provide a firm and tart flavor and a crunchy texture.
- herbs – mint and cilantro is what I used here
- red onion – if you can find it Asian shallots would be great
- chili peppers – I used – very spicy – Thai chilies. If you don’t like too much heat you can use regular red chili pepper for a less spicy result
- fish sauce – for the dressing fish sauce is a great flavor bomb!
- palm sugar – to finish the sauce palm sugar or coconut sugar is great to add
- lime – you’ll need lime juice for the dressing
- cashew nuts – totally optional too as it’s not necessarily traditional but I love it for added crunch. Peanuts are more traditional.
Optional additions: carrots, bell peppers, cooked shrimps, cucumber, bean sprouts or chicken.
How to Make Thai Green Mango Salad
Making this easy green mango salad is simple. You start by cutting all the vegetables into matchsticks or julienne. Slice the herbs.
Make the dressing by mixing the fish sauce, lime juice, sugar and the herbs. Mix it until the sugar dissolves.
Use a large bowl and add mango, onions, chili and any other vegetables you choose. Pour the dressing over the ingredients and toss it well. Serve with the chopped cashew nuts or peanuts.

Ingredients
- 2 large green mango peeled and cut into thin strips
- 1 small red onion finely sliced
- 1 red chili finely sliced
- 2 sprigs mint leaves finely sliced
- 2 tbsp cilantro sliced
- 2 tbsp cashew nuts or peanuts
Dressing
- 1 tbsp fish sauce
- 1 tbsp palm sugar
- 1 tbsp lime juice
- 60 ml hot water
Instructions
- Place the mango, herbs and onion in a salad bowl. Add a bit of the dressing and mix well.2 large green mango, 1 small red onion, 2 sprigs mint, 2 tbsp cilantro
