Just tired…

Even though it is Sunday today I had a photoshoot featuring loads and loads of cookies. I ate them… Not even that much but too much in any case as I feel crap. Even hours later that sugar is still in my system.. I should know better really as the past couple of months I’ve been busy studying hormone balance. Everything there is to know about our precious hormones. And what do I do? I mess up mine. Yesterday I had the exam and while some things went right, I’m pretty sure a lot of things did not.

So I will know later this week if I passed or failed. If I failed… the next exam is in January but to be honest I keep my fingers crossed that I passed. Not feeling like doing it all again! Anyway, those cookies I was telling you about? Terrible for your blood sugar levels. Mine sky rocketed and than plummeted all the way down to the deepest place they can be. So there’s that… And I actually had made the resolution to be better with eating healthy. I guess I’m not there yet.

To make sure you do a better job than me I’ve got this delicious recipe for you. It’s sweet, juicy and delicious and filled with good stuff.

Tomato salad with pomegranate

Prep Time: 10 mins
Cook Time: 15 hrs 56 mins
Servings: 1 person

Ingredients

  • 150 gr cherry tomatoes in various colours
  • 75 gr bell pepper in small pieces various colors if you have
  • 75 gr pomegranate seeds
  • basil
  • radish cress

Dressing:

  • 2 tbsp sweet vinegar
  • 2 tbsp of olive oil
  • pepper/salt

Instructions

  • Cut the tomatoes in small pieces and the bell peppers too. Add to a bowl and mix with the pomegranate
  • Add the basil and the radish cress
  • Make the dressing by mixing the ingredients. taste if it needs anything else and eat straight away!
