It’s easy to make and delicious when paired with something like bright green broccoli.

Recipe Ingredients
- chicken liver – I use about 300 grams of chicken liver for two people. I find that is usually enough
- mayonnaise – the base of the sauce is mayonnaise. While the total calories take the sauce into account you might not use all of it
- Dijon mustard – I love a bit of spiciness and Dijon mustard is perfect for that. If you have regular mustard and want to add a bit of heat you can add a bit of chili to the sauce as well

How To Make Chicken Liver With Mustard Sauce
Step 1: Clean the Liver
My first step is to clean the chicken livers. Sometimes there are some connecting tissue left between the chicken livers which can be a bit tough. Remove those and rinse the livers under cold running water. Dry on paper towels and set aside.
Step 2: Cook the broccoli
If you’re using broccoli steam or cook the broccoli while you make the sauce.
Step 3: Make the mustard sauce
Place all the ingredients for the sauce in a large jar. I usually do this in tall measuring cup but use whatever you have available. Blend it all together with a stick blender or simply use a whisk. I like to use the sauce cold but you can also briefly warm it in a sauce pan if you prefer.
Step 4: Cook the livers
Next step is to cook the livers in a skillet. This is quickly done and takes about 5 minutes for the livers to cook through. Serve with the broccoli and the sauce.

- Add a bit of olive oil in a large skillet and quickly sauté the chicken liver until browned and cooked through. This usually takes no more than 5 minutes. Depending on the size of your livers.
