A Different Way to Enjoy Cauliflower
It’s probably no secret by now that I absolutely love cauliflower. One of my favorite dishes is this cauliflower fried rice, and the bibimbap is delicious too, but there are so many more ways to prepare cauliflower. I’ve made a cauliflower steak with olive salsa before, and this is a new variation with my favorite vegetable.
Recipe Ingredients
It’s best to choose a large cauliflower head with fresh, tight leaves around it. If the leaves are starting to spread out or discolor, the cauliflower is no longer very fresh. The fresher the cauliflower, the sturdier your steaks will be. Check the full details in the recipe card below.
- cauliflower – keep in mind that you can’t use the entire cauliflower if you want to make steaks. The remaining leftovers can easily be turned into cauliflower rice.
- seasonings – I kept it simple here with just salt and black pepper because the chimichurri already adds plenty of flavor. You can also add paprika, chili powder, or ginger.
- chimichurri – I use my homemade chimichurri recipe for this.
- sweet potato fries – make them yourself or use frozen sweet potato fries from the store. Regular fries work perfectly too.
How To Make Cauliflower Steak
Making cauliflower steak is very simple. You’ll need a good sharp knife and a fresh cauliflower. First, carefully remove the outer leaves so you can better see the cauliflower’s structure.
Next, trim off the smaller florets around the edges. Usually, you can easily get four cauliflower steaks from one large cauliflower. Don’t cut them too thin, but not too thick either. I usually aim for about ½ to ¾ inch thick. Try to keep them as intact as possible, otherwise you lose the steak effect.
Place the steaks on a baking sheet and brush with a little oil. Sprinkle with salt and pepper to taste and roast in the oven for about 30 minutes. Of course, the total cooking time depends on the thickness of your cauliflower slices. Test with a fork before removing them from the oven. Flipping them halfway through can help them cook evenly, although I personally don’t usually do that.
Cauliflower Steak from the Air Fryer
If you have an air fryer you can definitely make this cauliflower steak in the air fryer as well. Preheat the air fryer to 180˚C/350˚F and place the steak in the air fryer basket. They will need about 15-20 minutes in the machine.
FAQ Cauliflower Steak
The cauliflower should be fork tender on the inside and golden brown on the outside. You should be able to easily pierce it with a knife without the steak completely falling apart.
Cut the cauliflower from the center into thick slices about 1 to 1¼ inches thick. Leave the core attached, as it helps hold the steaks together. Any florets that fall off can simply be roasted alongside the steaks on the baking sheet.

That depends on the thickness, but cauliflower steaks are usually done in 25–35 minutes at 400°F. Flipping them halfway through helps both sides brown nicely.
Yes, absolutely! Cook the cauliflower steaks for about 15–20 minutes at 350°F. Flip them halfway through for even cooking.
Pat the cauliflower dry before adding oil and seasonings, and roast the steaks at a high temperature. Don’t overcrowd the baking sheet so they roast instead of steam.
Cauliflower pairs well with seasonings like paprika, cumin, garlic powder, curry powder, ras el hanout, and Italian seasoning. Other spices of your choice will work fine too. Fresh herbs like parsley or cilantro also work really well.
Cauliflower steaks are delicious with couscous, quinoa, roasted potatoes, a fresh salad, or a yogurt sauce. Hummus or tahini sauce also pair beautifully. I also love serving it with a piece of salmon or another type of protein. It’s delicious as a side dish but works great as a vegetarian or vegan main course as well.
Yes you can but keep in mind that it will take longer. Make sure that the skillet is not too hot and don’t slice the cauliflower too thick. It’s easier in the oven if you have one.
If you have a bbq with friends in the summer you can absolutely make this cauliflower steak recipe as well. The process is more or less the same but make sure to keep an eye on the cauliflower and don’t use too much oil on the steaks. They will probably need a little less time to cook through.
