If you're looking for an alternative way to cook with cauliflower, this is the recipe for you. It's a perfect vegetarian main dish, but can also easily be served alongside a chunk of salmon for instance. It's pretty versatile and easy to make!
Cut thick slices from the cauliflower and place them on a baking sheet. Brush with olive oil and season with salt and pepper.
1 head cauliflower, 1 tbsp olive oil, Salt and pepper
Roast in the oven for about 30 minutes, or until a fork can easily pierce the cauliflower.
Serve the cauliflower steak with chimichurri and sweet potato fries.

Notes
Storing: You can store the uncooked cauliflower steaks in the fridge in an airtight container for up to two days. Once cooked you can also store them and reheat in the microwave or oven if you want to. Keep in mind that they will become softer in the microwave.
