Everything I love in this easy and delicious baked nachos recipe or also called nachos todos. Basically nachos with everything on it. Perfect as a snack or eat as part of a Mexican or Tex Mex dinner.

The very first time I tasted baked nachos was at a Mexican restaurant in Amsterdam. To be quite honest I am not 100% convinced if this is truly Mexican food or if this is more a tex mex invention but whatever the origin, it’s pretty delicious.

Making the baked nachos requires a bag of tortilla chips or nachos. There is apparently a difference between the two. Nachos are called totopos in Mexico and are somewhat different from the commercial bags of nachos you can find in the grocery store.

What goes into the nachos todos?

Now you can easily vary with what you put on the baked nachos but in general this is what I like to put on:

  • ground beef
  • tomatoes
  • loads of grated cheese
  • beans
  • jalapeños
  • nachos of course
  • guacamole
  • sour cream

For the beans I like to go with kidney beans or I leave the beans out. Kind of depends on what you want and if this is a complete meal or just a snack.

Prepare the baked nachos

Now if you’re making the baked nachos you want to make sure the beef is already cooked before it goes into the oven. The oven is only really used for melting the cheese on top so it won’t be in the oven for very long. Good to know!

I heat a skillet with some oil and add the garlic and the onions which I sauté for a bit before adding the ground beef. That gets cooked with salt and pepper and some ground chili for spicyness. Drain any excess fat that might have come out of the beef.

Melting the cheese

The next part of the proces is simple. You add the nachos to an oven proof dish and divide the ground beef over the nachos. Add plenty of cheese over the top and place in the oven for around 10-15 minutes or until the cheese is melted. That kind of depends what kind of cheese you’ve been using.

Once the cheese is melted, you take out the baked nachos dish and you add the other toppings. Tomatoes, guacamole and sour cream. Serve with extra guacamole and sour cream on the side.

Optionally sprinkle the dish with some extra red chili peppers and/or add some sliced jalapeños. Serve right away!

Ingredients

  • oil for baking
  • 2 cloves garlic finely chopped
  • 1 red onion finely sliced
  • 2 tsp Chili powder
  • 300 gr minced beef
  • salt and pepper
  • 200 g nachos or tortilla chips
  • 100 gr cheese grated
  • 200 g kidney beans optional

Serve with

  • 2 tomatoes finely diced
  • 2 spring onions finely sliced
  • 1 red chili finely sliced deseeded
  • Guacamole homemade
  • 75 gr Sour cream

How to make the baked nachos

  • Sauté the sliced onion and garlic in a frying pan over medium heat. Add the minced beef and chili powder and brown and break it up with a fork or spatula. Season with salt and pepper.
  • Preheat oven at 200˚C (400˚F) and meanwhile make the guacamole
  • Take an ove dish and make a big layer of the nachos. Add half of the ground beef on top and some cheese. Add another layer of the nachos and add the second half of the beef and more cheese. If you're using the beans you want to add them to the beef layer so they warm through in the oven.
  • Place the oven dish in the oven until the cheese has melted. Roughly 10 minutes. Sprinkle over the spring onion, the tomatoes and chili peppers. Serve with the guacamole and sour cream.
