Spicy Zucchini Fries with Lemon Aioli

Who says fries have to be made from potatoes? These zucchini fries are crispy, spicy, and downright addictive - especially when dipped in lemon aioli!

I’m always looking for fun new ways to enjoy veggies, and fries are at the top of my comfort food list. We all know sweet potato fries by now, but did you know zucchini makes amazing fries too? I hadn’t tried them before and was honestly surprised at how simple – and delicious – they turned out.

The trick is in the coating. Without it, zucchini can get soft and soggy, but with a crispy almond flour crust and a touch of spice, they’re crunchy on the outside and tender on the inside. Add a fresh lemon aioli for dipping and you’ve got yourself a snack (or side dish) that’s hard to resist.

If you’re already a fan of veggie fries, you might also love celeriac fries, classic potato fries, kohlrabi fries or even broccoli fries in the air fryer. Or try these polenta fries as well! But today – it’s all about zucchini.

Recipe Ingredients

  • zucchinis – you need about two zucchinis for 4 people as a side dish.
  • eggs
  • almond flour – you can also use breadcrumbs if you eat gluten. Adding a bit of parmesan cheese is also a great addition
  • garlic powder
  • Italian seasoning
  • chili powder (optional, for extra heat)

How To Make Zucchini Fries

Step 1: Prep the oven
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2: Slice the zucchini
Cut the zucchinis into fry-shaped sticks – about the same size as a French fry.

Step 3: Make the coating
In one bowl, whisk the eggs with garlic powder, Italian seasoning, chili powder, salt, and pepper.
In another bowl, mix almond flour with a little salt.

Step 4: Dip and coat
Dip each zucchini stick first into the egg mixture, then roll it in the almond flour mixture. Place them in a single layer on the baking sheet.

Step 5: Bake
Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Step 6: Make the aioli
In a small bowl, mix mayonnaise with lemon juice, garlic, parsley, salt, and pepper. Adjust seasoning to taste.

Step 7: Serve
Enjoy the zucchini fries hot, straight from the oven, with plenty of lemon aioli for dipping!

FAQ Zucchini Fries

Yes! Cook them at 375°F (190°C) for about 15 minutes, flipping halfway through. I have not tested it in the air fryer myself yet.

You can prep the zucchini sticks and even coat them in advance, but bake them just before serving to keep them crispy.

Just leave it out of the aioli or use a small pinch of garlic powder for a milder flavor.

They’re best eaten fresh from the oven, since zucchini contains a lot of water and can get soft if left to sit.

Expert Tip

Don’t overcrowd the baking sheet! Spread the zucchini fries out in a single layer so they bake up crispy instead of steaming. If needed, use two trays. Got any zucchini left over? Why not make this zucchini quiche too! Or pair the zucchini with something like chicken livers with mustard sauce.

Ingredients

For the zucchini fries:

  • 2 zucchinis medium
  • 2 eggs
  • 150 grams almond flour
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 2 teaspoons chili powder
  • Salt
  • Black pepper

For the lemon aioli:

  • 150 gram mayonnaise
  • Juice of 1 lemon
  • 1 clove garlic pressed
  • 1 tbsp parsley finely chopped
  • Salt and black pepper to taste

How to make zucchini fries

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the zucchini into sticks, about the size of regular French fries.

  4. In a separate bowl, place the almond flour with a pinch of salt. Roll the zucchini sticks in the almond flour until well coated, then place them on the prepared baking sheet.

  5. Bake for 25–30 minutes, flipping halfway through, until golden brown and crispy.
  6. While the fries are baking, make the lemon aioli: mix the mayonnaise with lemon juice, pressed garlic, and chopped parsley. Season with salt and pepper.

  7. Serve the zucchini fries hot, straight from the oven, with the lemon aioli on the side.

Notes

Storage: These zucchini fries do not store well. Eat them right away!
