Say you have made beurre noisette (browned butter) but want to make it even more special? Try this insanely delicious whipped beurre noisette or whipped brown butter. It makes it soft and creamy and is perfect for the holidays!
Whipped brown butter
If you’ve made my recipe for brown butter before you know how good it can be. And this whipped brown butter is even better. It is a perfect replacement for regular butter when you’re serving a cheese board for instance or some fresh bread. For making it I use unsalted butter. You let the butter melt and let it cook until the butter browns. When the butter melts, the milk solids will start to brown. You will see brown bits floating in the liquid. There is however a fine line between delicious browned butter and burned butter. So stay with it!
It enhances the nutty aroma of the butter and is delicious with pasta for instance or poured over some grilled vegetables.
Once you’ve made your brown butter recipe you can transfer the butter to the refridgerator to let it cool completely. Alternatively you can use an ice bath as soon as the butter is golden brown, but to be honest I do not bother with that. Of course if you’re stressed for time adding it to an ice bowl is a good option. But I just place the butter in the fridge and wait for it to set and cool.
Whip it up
Once everything has cooled and set, it’s time to whip up the brown butter. When you take it out of the fridge, it doesn’t look very appetizing, but a little patience and a hand mixer or electric whisk will work wonders. The result is an unbelievably delicious whipped butter. You might have had it in a restaurant at some point. Velvety smooth and creamy butter with the perfect consistency. The only thing you need for serving this is some crusty bread. Absolutely delicious.
For finishing the whipped brown butter you end with seasoning. I keep it simple by adding salt and pepper. Now while it is ok to add quite some salt to the butter make sure to do this in stages, so you do not add too much salt. Alternatively you can sprinkle some salt over the butter when you spread it on your toast. That’s a good option too and it also means people can add their own preferred amount of salt to the whipped butter.
How to make whipped brown butter
- Cut the butter into small pieces. Put it in a saucepan (preferably a white one, so you can see when it has the right colour) and let it melt gently, stirring all the time. Stir until the butter starts to turn brown and smells nutty. Remove from the heat just before you think it is brown enough, as the butter is still cooking.

- Leave the beurre noisette to cool in the fridge. When it has cooled, take it out of the fridge and whip the butter until light and fluffy, season well with salt and pepper, not too sparingly as well-salted beurre noisette is delicious.
