This is one of my favorite ways to use sauerkraut. It's super easy to do and the flavor of the sauerkraut doesn't disappear in other flavors. So if you love sauerkraut try to make this simple dish!

Sauerkraut + Meatballs = Dinner Magic

A week ago, I shared my homemade sauerkraut recipe â€” and suddenly I had jars of the stuff ready to go. So naturally, I started playing around with tasty ways to use it. I’ve already posted recipes for sauerkraut casserole and have a few more lined up for the coming weeks. But this one is my definite favorite (although it’s hard to choose!) It’s simple, it’s hearty, and it’s super satisfying.

Want to take it to the next level? The gravy. Oh yes. This dish is delicious on its own, but it gets even cozier when you serve it with a creamy side like cauliflower mash, buttery mashed potatoes, or even a silky celery root puree. Not a fan of eating sauerkraut straight-up? These sides mellow things out in the best way. And if you’re more of a boiled potato fan — you’re in good company. That’s a classic, too!

Let’s Talk Meatballs

Sure, sauerkraut is the absolute hero of the dish, but the meatballs? They’re the super heroes. They need to be packed with flavor. I always do a quick test by frying up a tiny “sample” meatball first — it’s the best way to check your seasoning before you cook the whole batch. Pro tip: want to spice things up? Add a pinch of chili powder or something like piri piri sauce to the mix for a subtle kick!

This time, I made a quick gravy using broth and a few flavorful extras. It’s easy, fast, and crazy good. But hey, if you’ve got leftover gravy in the fridge or want to use the drippings from the meatballs, go for it! Either way, you’re on your way to something seriously delicious.

Sauerkraut with meatballs

Ingredients

  • 500 g ground beef
  • 1 tbsp Italian herbs dried
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • 750 g sauerkraut drained weight

Gravy

  • 3 tbsp coconut oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 300 ml chicken stock
  • 2 tbsp arrowroot or cornstarch
  • Salt and pepper
  • 1 tbsp coconut aminos or substitute with soy sauce
  • Delicious with cauliflower or mashed potatoes

Instructions

  1. Mix the minced meat with the spices, garlic, onion powder, salt, and pepper. Mix well and shape into balls the size of a ping pong ball.
  2. Fry the meatballs until cooked and golden brown. Remove the meatballs from the pan and fry the sauerkraut in the same pan until heated through.
  3. Make a gravy by heating a small saucepan with coconut oil. Mix the arrowroot with one or two tablespoons of the chicken stock.
  4. Add the onion powder, garlic powder, and the rest of the broth to the pan. Add the arrowroot mixture and the coconut aminos. Bring to a boil so that it forms a thick sauce. If it is too thick, add some extra broth.
  5. Serve the sauerkraut with the meatballs and the gravy.

    This is a pretty simple sauerkraut dish but nonetheless full of flavor. You can use the gravy or go without, but it’s absolutely delicious!

    I love sauerkraut and the meatballs were very good, too. The gravy just did not do a thing for us. We had beef meatballs and the gravy was chicken stock based. Just didn’t compliment the kraut or the meatballs. We liked the dish plain, without the gravy.
