You can eat these brownie bites with or without the melted chocolate, the choice is yours. They’re delicious either way. I like adding cacao nibs for a bit of extra crunch, but that’s totally optional. Chopped dark chocolate is also a great alternative. If you dip them in melted chocolate, pop them in the fridge for a bit so they set quickly.

- Shredded coconut – adds texture and helps keep the chocolate from melting too quickly when you hold a bite. Optional and can easily be left out
- Almond butter – this forms the base of the bites, combined with honey and a little vanilla
- Cocoa powder – I used raw cacao, but regular cocoa powder works too (it’s slightly less bitter)
- Almond flour – adds extra flavor and helps bind the bites
- Cinnamon – I think cinnamon makes everything better, but you can leave it out or swap it for ground ginger or cardamom

How To Make Brownie Bites
Making these brownie bites is super easy. It’s similar to date balls like high-protein date balls or orange chocolate bites.
Start by mixing the wet ingredients: almond butter, honey, and vanilla extract. Almond butter can be a bit thick, so stir it well. Then add the dry ingredients and knead everything into a firm dough.
It works best to first mix with a spoon until it starts to come together. After that, using your hands is easier. The dough will be quite sticky, that’s normal.
Melt the chocolate using a double boiler. Using two forks, dip each ball into the chocolate. Place them on parchment paper and sprinkle with shredded coconut while the chocolate is still wet. Chill in the fridge if you want them to set faster.

- 40 grams almond flour
- 2 tbsp raw cacao
- ½ tsp salt
- 25 grams cacao nibs
- 200 grams dark chocolate
- 50 grams shredded coconut
Instructions
- Mix the almond butter, honey, and vanilla together. Add the dry ingredients (almond flour, cocoa, cinnamon, and salt).
