Sometimes I just need a little chocolate moment during the day, nothing too complicated, just something quick and satisfying. These brownie bites are exactly that. They come together in minutes, taste like a treat, and have that perfect fudgy texture that makes you reach for just one more. (And maybe one more after that 😉)
Mix the almond butter, honey, and vanilla together. Add the dry ingredients (almond flour, cocoa, cinnamon, and salt). Stir with a spoon first, then knead into a firm dough with your hands once it starts to come together.
120 grams almond butter, 2 tbsp honey, 1 tsp vanilla, ½ tsp cinnamon, 40 grams almond flour, 2 tbsp raw cacao, ½ tsp salt
Mix in the cacao nibs and roll into small balls.
25 grams cacao nibs
Dip each ball into melted chocolate and sprinkle with shredded coconut while still wet.
200 grams dark chocolate, 50 grams shredded coconut
Place the bites on parchment paper and let them set. This will happen quickly if you refrigerate them.
Notes
You’ll melt more chocolate than you actually use, this is needed to properly dip the bites. Don’t want to dip them? They’re just as delicious without the chocolate.
