Easy and healthy chocolate popsicles with banana

Easy to make and delicious and creamy. This recipe makes about 6-8 popsicles. Depending on the size of your popsicle mold.

Does ice cream always need to be unhealthy? No! With these delicious and easy healthy chocolate popsicles or chocolate fudgesicles you’ll make anyone happy. They’re lactose free, gluten free and just plain perfect for a hot summer day! With all the healthy ingredients you can enjoy your ice cream guilt free.

Healthy chocolate popsicles

This easy recipe for healthy chocolate popsicles uses a combination of almond milk and coconut cream. For sweetness I added two ripe bananas and for the chocolate part it has unsweetened cocoa powder. Pretty simple ingredients but so delicious! For extra flavor I also added some almond paste. The crumbled pistachio is totally optional but really tasty to add. 

Other than that you just need a blender to make a smooth chocolate mixture and your healthy chocolate popsicles are as good as done. Minus the freezing of course.

For making them I do use full-fat coconut milk. You want it to be creamy. 

Which ice cream molds to use?

I struggled big time the first couple of times I made my own homemade popsicles. While the making part is always super easy to do, it was the removing the popsicles from the mould that gave me a headache. I let warm water run through the form until the outside of the popsicles started to slightly melt. And while that did work, it took so much time! You know when you really want that ice cream but can’t have it, because it won’t come out of the case? So I was over the moon when I found out that silicone molds are the perfect way for getting them out easily. You have so many different popsicle molds these days and they’re so much easier to use than conventional molds. I’ve never looked back. The ones I use most often are these.

Apart from the popsicle mold you also need some wooden popsicle sticks. The wooden stick should be placed in the form where there is usually a place for in the mold itself. Even though silicon is easy to use, don’t try and pull it out by the stick alone. You’ll still be left with just the stick in your hands if you do. It works best if you let it stand at room temperature for a bit before you push the popsicle out from the bottom. 

Additions and variations

While these healthy chocolate popsicles use simple ingredients there is nothing wrong with adding some other things to it. They’re not overly sweet so if you’re a big fan of sweet treats you can add some coconut sugar to the mix. Make sure it dissolves properly as you do not want to taste the added sugar crystals in your ice cream. I also like to add a little bit of pure vanilla extract as well. You can add more cacao powder as well if you want.  Some pure maple syrup is also a good addition or change things up by replacing the coconut cream for plain Greek yogurt. These banana chocolate popsicles are easy to vary.

You can replace the almond paste with peanut butter if you like.

It’s best made with a high-speed blender to make sure it is totally smooth. Once the mixture is poured into the popsicle mold you need to let it freeze for at least 4 hours before you take out the frozen popsicle. If you want them to be a bit more fancy you can even dip the chocolate fudge popsicles into melted chocolate. And then add a sprinkle of the pistachio after that for color effect.

Ingredients

  • 200 ml almond milk Alpro
  • 200 ml coconut milk
  • 2 bananas ripe
  • 1 tbsp cocoa powder
  • 2 tbsp almond paste
  • 2 tbsp pistachios very finely chopped

Equipment

  • silicon ice cream molds

How to make the healthy chocolate popsicles

  1. Whirl all ingredients smooth in a blender.
  2. Transfer to the moulds and freeze for at least 4 hours. Remove from the moulds and dip briefly in the pistachios.

    • I used popsicle molds I purchased on Amazon. I’ve been trying to find those specifically but can’t find them anymore! Sorry
