While I love munching on blackberries straight from the bush, there is also something utterly comforting about baking them in the oven until bubbly and soft. Combine with some yogurt or ice cream for an easy and delicious dessert!

There’s something about a bubbling fruit dessert straight from the oven that instantly makes the whole house feel cozy. This blackberry cobbler with juicy nectarines is one of those recipes that looks impressive but is incredibly easy to make. Serve it warm with a scoop of vanilla ice cream for dessert, or enjoy leftovers for breakfast with a dollop of yogurt. I won’t judge!

Recipe Ingredients

For the fruit filling

  • Blackberries – Fresh blackberries work best, but frozen can be used as well.
  • Nectarines – Peaches are an excellent substitute, or use plums or apricots.
  • Arrowroot starch – Helps thicken the fruit juices. Cornstarch works just as well.
  • Maple syrup – Adds natural sweetness. Honey can also be used if you’re not making a vegan version.
  • Lemon juice – Brightens the flavor of the fruit.
  • Vanilla extract – Adds warmth and sweetness.

For the topping

  • Almond flour – Creates a delicious gluten-free topping. Finely ground tiger nut flour (chufa flour) also works well.
  • Coconut oil – Melted coconut oil binds everything together. Unsalted butter can be substituted if preferred.
  • Maple syrup – Adds just enough sweetness.
  • Ground cinnamon – A classic pairing with berries.
  • Ground cardamom – Gives the topping a subtle, warm spice.
  • Salt – Enhances all the flavors.

To serve, I love adding a generous spoonful of coconut yogurt, but vanilla yogurt or vanilla ice cream are equally delicious.

What is a Cobbler?

A cobbler is a classic fruit dessert with a layer of fruit baked underneath a rustic biscuit-like topping. Unlike a crumble, which has a streusel topping made with butter and flour, a cobbler has dollops of dough or batter that become beautifully golden in the oven.

The name “cobbler” is believed to come from the way the topping looks after baking, resembling cobblestone streets. Whatever the origin, it’s one of the easiest and most comforting fruit desserts you can make. You can also have a savory version, like this chicken cobbler.

How to Make Blackberry Cobbler

Preheat your oven to 350°F (180°C).

In a large bowl, combine the blackberries, chopped nectarines, arrowroot starch, maple syrup, lemon juice, and vanilla extract. Stir until everything is evenly coated.

Transfer the fruit mixture to a baking dish measuring about 9 inches (22 cm).

In a separate bowl, mix together the almond flour, melted coconut oil, maple syrup, cinnamon, cardamom, and salt until combined. Spoon small amounts of the topping over the fruit. The fruit doesn’t need to be completely covered.

Bake for about 30 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Serve warm with coconut yogurt, vanilla yogurt, or a scoop of vanilla ice cream.

Storage

Refrigerator: Store leftovers in an airtight container for up to 3 days. Reheat gently in the oven or microwave before serving if desired.

Freezer: Freeze the baked cobbler for up to 3 months. Thaw overnight in the refrigerator and warm in the oven before serving.

Ingredients

For the filling

  • 400 grams fresh blackberries
  • 2 nectarines pitted and cut into bite-sized pieces
  • 1 tbsp arrowroot starch
  • 3 tbsp maple syrup
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract

For the topping

  • 110 gram almond flour
  • 3 tbsp melted coconut oil
  • 4 tbsp maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ tsp ground cardamom

To serve (optional)

  • Coconut yogurt
  • Vanilla yogurt or vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, combine the blackberries, nectarines, arrowroot starch, maple syrup, lemon juice, and vanilla extract. Toss until the fruit is evenly coated.
  3. Transfer the fruit mixture to a 9-inch (22 cm) round baking dish.

Notes

Fresh blackberries work best, but frozen blackberries can also be used without thawing first.
Nectarines can easily be replaced with peaches, plums, or extra blackberries.
Store leftovers covered in the refrigerator for up to 3 days or freeze for up to 3 months.
