A delicious homemade pumpkin spice latte made with real pumpkin puree, warm spices, strong coffee, and topped with whipped cream. The perfect cozy fall drink!
Preheat the oven to 400°F (200°C). If making your own pumpkin puree, spread the diced pumpkin on a baking sheet and roast for 20-30 minutes, or until tender. Use an immersion blender or food processor to blend until smooth. If using prepared pumpkin puree, skip this step.
In a medium bowl, whip the heavy cream with 2 tablespoons of the sugar until stiff peaks form. Set aside.
Combine the milk and pumpkin puree in a small saucepan. Add the remaining 2 tablespoons of sugar, pumpkin pie spice, and vanilla extract. Heat over medium heat, stirring occasionally, until hot but not boiling. For a frothier latte, whisk the mixture vigorously or use a milk frother.
Divide the warm pumpkin milk mixture evenly among four glasses or mugs. Pour the strong brewed coffee into each glass and gently stir to combine.
Top each latte with a generous dollop of whipped cream. Add a few mini marshmallows if desired, and finish with an extra sprinkle of pumpkin pie spice. Serve immediately.
Notes
Pumpkin puree: Use homemade or canned pure pumpkin puree. Avoid pumpkin pie filling, which already contains sugar and spices.
Coffee: Strong brewed coffee works well, but you can substitute espresso for a more intense coffee flavor.
Make it dairy-free: Substitute your favorite plant-based milk and use dairy-free whipping cream.
