If you've been to Sweden and more specifically to the Smaland area you might have tried these delicious crispy potato waffles. They're super easy to make and can be served both with savory condiments or sweet like I did here.
Cook the potatoes until partially tender but still firm. Don’t overcook them. Let them cool completely, then grate them coarsely.
Add the flour, baking powder, and salt to a large mixing bowl and stir to combine.
Add the egg, milk, and water and whisk until the batter is smooth.
Pour in the melted, cooled butter. Stir to combine, then fold in the grated potato. Let the batter rest for 10 minutes.
Preheat your waffle iron and grease it well. Spoon in the batter and cook the waffles until cooked through and golden brown. Cooking time will depend on your waffle iron.
