Ostkaka – Swedish Cheesecake

Ostkaka is a traditional Swedish cheesecake with a soft, slightly grainy texture and a subtle almond flavor. Don’t expect a classic creamy cheesecake with a cookie crust, though. This Swedish version is somewhere between a cheesecake and a firm pudding in texture and is usually served warm with jam and whipped cream.

Ingredients

500 g cottage cheese
50 g all-purpose flour
375 ml heavy cream — whole milk can also be used
3 large eggs
100 g granulated sugar
Zest of 1 lemon

For serving

Jam
Whipped cream

Instructions

Preheat the oven to 400°F (200°C). I used the convection setting.
Grease an 8- to 9-inch (20-22 cm) round baking pan.
Place the cottage cheese in a large bowl and mash it slightly with a fork.

Add the flour, heavy cream, eggs, sugar, and lemon zest. Mix until well combined.
50 g all-purpose flour, 375 ml heavy cream — whole milk can also be used, 3 large eggs, 100 g granulated sugar, Zest of 1 lemon
Pour the mixture into the prepared baking pan.
Bake for about 45 minutes, or until golden brown. The edges should be set and firm, while the center should still have a slight wobble.
Let cool and serve with jam and whipped cream.
