This is such an easy and delicious way to eat shrimps! It's ready in about 20 minutes (when you use cleaned raw shrimps) and can easily be combined with something like potato mash or cauliflower mash.
Heat the olive oil in a large skillet. Sauté the onion until translucent. Add the garlic and cook briefly, then add the smoked paprika.
Add the spinach to the skillet and cook until wilted. Pour in the coconut milk and chicken broth and season with the Italian seasoning, salt, and pepper. Stir in the mustard.
Add the cleaned shrimp to the skillet and let them cook gently in the liquid.
Mix the arrowroot with a small amount of liquid from the skillet and stir until there are no lumps. Add it back to the skillet and let the sauce thicken slightly.
