Classic Dutch mashed potatoes with carrots and onions, served with crispy bacon and smoked sausage. It's one of my favorite comfort food dishes and so easy to make!

Instructions
Bring a large pot of water to a boil. Add the onions and carrots, bring back to a boil, and cook for about 5 minutes.
Add the potatoes and simmer for approximately 15-20 minutes, or until both the potatoes and carrots are tender enough to mash easily.
Meanwhile, cook the bacon in a skillet until crisp. Prepare the smoked sausage according to the package instructions.
Drain the potatoes and vegetables thoroughly, then return them to the warm pot. Let any excess moisture evaporate briefly.
Mash coarsely with a potato masher. Add the butter, then gradually stir in enough milk to make a creamy mash. You may not need all of it.
Fold in the cooked bacon and serve with the warm smoked sausage.
