Looking for an easy Easter dessert featuring eggnog? This is ready in no time at all and a crowd favorite. I love adding some extra eggnog, but you can also make an alcohol-free version by replacing the eggnog with a drizzle of melted chocolate (white or dark chocolate)
Whip the whipping cream with the sugar until forming stiff peaks.
250 ml heavy cream, 2 tbsp sugar
Add the lemon curd and cream cheese and whisk for a minute. Don't beat too long! You don't want the whipped cream to curdle.
2 tbsp lemon curd, 150 gr cream cheese
Now take four nice glasses and start with a layer of crumbled meringue. On top of this spoon some of your whipped cream mixture.

The mango cubes come on top of this. Top that with another layer of meringue crumbs and finish with some more of your whipped cream mixture. You can spoon it right on top or you can use a whipped cream sprayer.
100 gr mango
Sprinkle some of the lime zest over the top and finally pour the eggnog on top.
1 lime zest, 4 tbsp eggnog
Serve with a chocolate Easter bunny or chocolate egg if desired.

Storing: You can make this easter dessert in advance and store in the fridge - covered - for one or two days.
