Banana cake with cranberries
all purpose flour
at room temperature
very ripe bananas
zest of 1 orange
Preheat the oven to 180 C. Prepare a baking tin by lining it with baking paper. Set aside.
Whisk the butter and sugar together to a creamy light mix and add the eggs one by one.
Mash the bananas with a fork until you have a smooth puree
Add flour, bakingpowder and the banana together with the butter mixture and mix this well
Add pumpkin seeds, cranberries, orange zest and the pecans and mix with a spoon until spread throughout.
Pour over the baking tin and put into the oven. Bake for about 30-40 minutes or until a wooden skewer inserted in the middle comes out clean.
leave to cool completely before slicing or you'll have the same effect I had in the last picture.. ;)
