Cut the top of the cherry tomatoe and remove the insides with a teaspoon. Put away in the fridge untill you need them.
Mix the mayonaise, sherry, dragon and parsley together and add salt and fresh pepper to taste.
Carefully mix the shrimps through the mixture. Put the mixture into the tomatoes and sprinkle with some extra parsley.
So, again; very quick and tasty recipe but the skin is a bit of a problem. If you put the filling in too soon before serving it starts to run down a bit, so best to add the filling ad the last moment to keep it looking fresh!
