Take a large bowl and use it to mix the flour, corn flour and the baking powder. Add a pinch of salt
Add the oil, buttermilk and the egg yolks to it.
Whisk the egg whites to stiff peaks and fold it through the batter.
Cut the kimchi smaller and stir through the batter.
Heat your waffle iron and brush with some oil. Bake the waffles in the hot iron.
Mix the mayonnaise and the soy sauce together into a thin sauce. Serve the waffles with the sauce, fried onions, spring onions, garden cress and some extra mayonnaise if you want.
