This delicious chicken walnut salad is perfect for use on a cracker or can be eaten with extra vegetables. Quantity is enough for a spread for four or a meal for 2.
Start by poaching the chicken in a pan with salted water. Leave to cook for about 10 minutes or until the chicken is cooked through. Remove from the water and let it cool.
Pull the chicken apart with your fingers or by using two forks and place in a bowl. Add the chopped walnuts, the chopped parsley and the grated carrot and mix it well.
Make the dressing by combining the ingredients and add pepper and salt to taste.
Mix the dressing through the salad and stir through
