300mlof double cream or whipping creamI used whipping cream

splash of wodka
Put the mango chunks in a blender and blend until smooth. If you don't own a blender I am sure this will work equally well in a magimix or similar machine or handblender.
Once pureed, add the sugar and cream and mix the lot together until smooth. I did this by hand as I was a little afraid that the blender would start whipping the cream into another consistency, but maybe that doesn't happen. I don't know.
Add the lemon juice and wodka and cool in the fridge for at least an hour.
Once cool; put in your icecreammaker according to the instructions of the manufacturer. Mine took about 25 minutes to finish.
