Chop or ground the fish nice and finely. Grate the lemon or lime and put the zest through the fish.
For taste add the paste and the fish sauce in and at least the flour and egg. Mix until you get a sort of thick dough which you can use to make cookies.
Deseed half a red pepper and chop finely, chop the parsley and chop the onion finely too. Mix into the fishmeat. Make 10-12 fish cakes out of the mix.
Hak of maal de vis mooi fijn. You make the cookies by making a rond small ball and than pushing that flat between your hands.
Tip: if you wet your hands first it is easier to form the balls so the meat doesn't stick to your hands.
Bring the oil to temperature and bake the cookies golden and brown. About 2-3 minutes on each side will give the best result. Leave to drain on kitchen paper and serve immediately with sweet chili sauce or soy sauce with a good splash of wasabi
