To make the sandwich, start by topping 1 of the slices of bread. Spread the goat cheese slices over the bread and cover with the marmalade. Sprinkle some thyme leaves on top.
Place the other slice of bread on top and spread both slices with butter.
Melt the rest of the butter in a frying pan and fry the sandwich on both sides until golden brown. You can help the cheese melt by putting a lid on the pan for the last few minutes.
