Mix all the dry ingredients together (flour, baking powder, baking soda, spices and salt) in a large bowl.Mix all the wet ingredients (3 of the bananas, apricots, coconut oil, almond milk, apple cider vinegar) in a mixing bowl and puree it all together with a stick blender. It's ok if you see some apricot pieces floating around, but the banana should be smooth.
Add the wet to the dry ingredients and mix it till if forms a batter. Pour into your baking tin. Smooth the top and slice the last banana lengthwise. Place both end into the batter and press them in a little bit. place into the oven and bake for 40-45 minutes or until a wooden skewer comes out clean.
