Roasted courgette with bacon and pinenuts

  • 1 courgette sliced
  • 50 gr pinenuts
  • 3-4 slices streaky bacon
  • parsley chopped
  • fresh mint chopped
  • olive oil
  1. Brush the slices of courgette with olive oil and bake them in a grillpan until cooked. In another pan bake the bacon until crispy and leave to drain on kitchen paper. Chop into smaller pieces.

  2. Roast the pine nuts

  3. Make the salad by assembling the courgette slices on a place. Sprinkle with the pine nuts and the bacon and end with the fresh herbs.
