Cacahuate beans with chorizo, oyster mushrooms and nopales

Ingredients

cooked cacahuate beans
with the broth they were cooked in *

Mexican chorizo
1/2
onion
chopped
1
clove
garlic
minced
1
fresh jalapeno pepper
seeded and sliced

g
oyster mushrooms
diced
oregano
rosemary
basil
4
small nopales
grilled *
4
scallions
grilled
Instructions
In a heavy skillet cook the chorizo until it starts to brown.
2. Sautee onion and garlic in the chorizo fat.
3. Add jalapeno and beans. Bring to a boil.
4. Add mushroom, spices and adjust seasoning.
5. Reduce heat to low and simmer for about 7 minutes.
6. Serve on a plate and top with grilled nopales and scallions.
