2tbspfreshly grated coconut or desiccated coconutto serve

Instructions
Combine the rice flour, self raising flour, baking powder, instant yeast powder, sugar and salt in a mxing bowl. Add your spices (cinnamon, cardamom and cloves) and stir to mix it all. Add the coconut milk and 2 tbsp of water and stir until the sugar is dissolved.. Leave to stand at room temperature for 30 minutes.
Divide the mixture into six small ramekins.
Arrange the moulds in a bamboo or electric steamer and steam for 15 minutes, or until the cakes are nicely risen. Depending on the size of the steamer, you may need to cook the rice cake in batches. Serve hot or cold with the coconut scattered over and a sprinkling of sugar if you like.
