Ingredients
3large red onionswhite are ok too. You don't really see the difference but you will taste the difference
150gramflour
250mlcold beerthe colder the better, as this will make the batter lighter
2eggs
Pinchof black pepper
2pinchesof salt
pinchof cayenne pepper
pinchof paprika
oil for fryingsunflower or similar and enough to fill a sufficient part of a wok or deep pan
Instructions
Put your wok or pan with the oil on the heat and heat up to 180 C. Real men feel the temperature with their fingers. Smart men ask their wife where she keeps the kitchen thermometer.
Clean the onions and cut in rings of about half a centimeter thick
Whisk one egg in a large bowl and weigh 30 gram of the flour (3 large tbsp) that you put into a second bowl.
In a third bowl whisk the 120 grams of flour, the ice cold beer and the other egg to a fluffy and airy batter.
Don't over whisk it or you'll beat out the air.
While whisking add both peppers and one of the pinches of salt in the batter.
Drag the onion rings first through the flour, than through the whisked egg and last through the batter.
Immediately put into the hot oil and fry until golden and crispy. This will take about 3 minutes. Make sure not to fry too many in one go. The onions will be at their crispiest when they can swim around the oil freely.
Use a slotted spoon to take the onion rings out of the oil and leave to drain on kitchen paper. Put them in a bowl to serve and dust with a bit of paprika and the second pinch of salt
