Broccoli salad with ginger poppyseed mayonaise

Ingredients

decent amount of broccoli
around 350 gram
1/2
red onion
in thin rings
1
tbsp
of apple vinegar
2
tbsp
of goji berries
2
tbsp
of almonds
roughly chopped
3
tbsp
of mayonaise
1/2
thumbsize piece ginger
grated
1
tbsp
poppyseed
1/2
tbsp
apple vinegar
seasalt
Instructions
Cut the broccoli in fine pieces and use the shaving attachment on your foodprocessor to make it small or cut by hand.
Soak the red onion about 15-20 minutes in the apple vinegar (you can use this later to ad to the salad)
Soak the goji berries 10 minutes in warm water until the become soft and plumb.
Use a large bowl to mix the broccoli, soaked onion, goji berries and the chopped almonds.
Make your own mayo or use three tbsp and mix this with the ginger, half a tbsp of apple vinegar and the poppyseeds. Add seasalt if needed.
Mix it all together and enjoy!
