This recipes makes about 350 gram of standard cookie dough (pâte sablée) For a christmas cookie flavor you could of course add a bit of cinnamon or other spices to the dough. Keep in mind that the cookies might end up a bit darker if you do.

Ingredients
100gramsoft butter
75gramicing sugar
1egg yolk
1/2tspvanilla extract
150gramflour
For the glaze
icing sugar
lemon juice/water
Instructions
Place butter and icing sugar together in a mixing bowl and mix until light and creamy. Add the eggyolk and the vanilla to it and mix for another 10 seconds. Sieve the flour and mix with the butter on low. Turn the dough out onto a working bench dusted with flour and form into a ball. Wrap in clingfilm and put into the fridge for at least 2 hours.
Preheat the oven to 170 C
To make the cookies, roll out the dough to the desired thickness and use various cutters to make the cookies. Put them on a baking tray and bake the cookies in the oven until golden. This will take approx 10-15 minutes. Leave to cool completely before decorating
Decorating can be done any way you like. Be creative. To make the glaze add the icing sugar with just a tiny amount of water together and mix til it becomes smooth and glossy but not too runny. Remember you have to be able to pipe it onto the cookies without it dripping down straight away. Too thick is also not good as that will just never get a smooth surface.
For some added taste you can use lime or lemon instead of water to the glaze.
