Ingredients
1sheetpuff pastrydefrosted
3red onionssliced
1tbspbrown sugaror balsamic vinegar
100grsoft goat cheese
1twigFresh thymeleaves only
25grArugulaoptional
1eggwhisked
Instructions
First start by making your caramelized onions. For this you heat a skillet with a bit of olive oil and add the onion slices. Now cook on low heat for 10-15 minutes until they become soft and translucent. Add the sugar or balsamic vinegar and let it caramelize for a few more minutes. Be careful not to burn!
Preheat the oven to 200˚C (400˚F)
Take a round cutter of about 7 cm and cut little rounds from the puff pasty. Take another cutter that is slightly smaller and press inside of the cut out round,but don't cut it through entirely. Prick a few holes with a fork in the middle of the round. Fill the inside with the red onion chutney. You need about 1 tsp per bite, depending on how big you made them. Place them on a baking sheet covered with baking paper.
Now crumble some goat cheese over each of the bites. Add a few thyme leaves and
Bake in the oven for about 15 minutes till your bites are golden brown and cooked. Serve with a bit of arugula if you want.
